Easy to Make – Preparing this healthy tortellini soup recipe requires only a handful of simple ingredients and 30 minutes of cook time.

Ingredients:
One Pound of Sausage
1 Onion Diced
2 Celery Stalks Diced
2 Carrots Peeled and Chopped into small pieces
3 Cloves of Minced Garlic
1 Teaspoon of Salt
½ Teaspoon of Pepper
½ Teaspoon of Italian Seasoning
6 Ounces of Tomato Paste
½ Cup of Dry Wine
½ Cup of All Purpose Flour
6-7 Cups of Vegetable Broth
14 Ounces of Tortellini
2 Cups of Half and Half
1 Cup of Fresh Spinach

Preparation:
In a large stockpot set over medium-high, cook the sweet & hot sausage, breaking up into little pieces. When the sausage is mostly browned, add chopped onion, diced celery and diced carrots, sauté for 5 minutes or until the vegetables are soft.
Add the garlic, spices, and tomato paste; sauté for an additional 5 minutes, or until fragrant, stirring occasionally to prevent it from burning.
Add wine and let it cook out for a few minutes. Stir the flour into the sausage and cook for 1 minute. It’ll be sticky and dry. Gradually add in the vegetable broth, stir to combine. Continue cooking until the mixture reaches a simmer, then reduce heat to low and simmer for 15 minutes.
While the soup is simmering – pre cook your cheese tortellini.
Add the half & half to your soup, then bring it to a low simmer. Add the pre cooked tortellini and fresh spinach. Cook an additional 5 minutes until the spinach is wilted. Serve with fresh Parmesan, Basil and Italian Bruschetta toast for dipping. So yummy!! If you like it spicy add in some red pepper flakes.
