First ribeye, packaging said 21 days dry aged. Purchased in Budapest for 16 usd. Rubbed with salt, pepper and a little bit of olive oil after it cooled to room temperature. High heat 2:30 min each side, 30 seconds just the fat part. Fried in olive oil. Based with butter and 3 garlic gloves. Set it to rest for 5 minutes. Did I over cook it a little?

    I would have added ground salt and pepper. The pepper crumbs will get a little burnt and makes for a nice sear crust.

    Try stainless steel or cast iron next time. Use a high smoke point oil. You’ll get a better sear. Non stick doesn’t sear well and olive oil has too low of a smoke point.

    I know it could be pricey, but when it comes to cooking steaks and searing them, using a cast iron pan is the real game changer.

    Great job, I’d have the pan hotter and make sure you have the steak at room temperature before you cook also.

    Also can try adding a sprig of thyme, a few sage leaves and a bashed clove of garlic towards the end. Cooked sage is yummy and crispy at the end 👌

    Do not ever fry anything with olive oil. It breaks down even close to 30 Celsius, never mind frying with it.

    did… did you season it with anything? i see a few specks of pepper, you have to season wayyyy more than you think with steak especially the bigger cuts salt pepper garlic powder and onion powder you should barely be able to see the steak under the layers of seasoning 30% falls of when you put in the pan

    That’s not a ribeye. The fat doesn’t look rendered. The sear could use a lot of work. A cast iron pan on high heat will help next time, hopefully with an actual ribeye. But I hope it tasted ok.

    The color is fine, however needs more crust and that fat needs to be rendered more

    While Cast iron, stainless etc may be better , the non stick non sear thing is overblown. Check some YouTube videos of people getting great sear with non stick. I wouldn’t do it personally tho
