Whole roasted Greek chicken. It’s such an easy marinade and makes for a banging weeknight dinner.

For this Greek Chicken you will need:
1 chicken
1 lemon sliced
4 small potatoes halved
Salt and pepper

For the Marinade:
4 cloves of garlic
1 tablespoon of fresh thyme
2 heaped tablespoons of fresh oregano
Zest of 1 lemon and half of its juice
1 tablespoon of Dijon mustard
4 tablespoons of olive oil
1 teaspoon of salt
4-8 grinds of cracked black pepper

For the marinade, blend all of the ingredients together. Take the backbone out of the chicken, lay it in a tray, and add the slices of lemon and potatoes. Give it all a season with salt and pepper, then pour the marinade over the chicken.
Cover it with foil and roast in the oven for 40 mins at 180c and then take the foil off and roast at 190c for 15 mins.

Serve it all up with a delicious, tomato, cucumber, red onion, and feta salad, and a few roast potatoes, and there you have a quick weeknight chicken dinner, it will be as if you’re sitting in your favorite place in Greece!
