The easiest sourdough focaccia recipe! Perfect for all skill levels, even beginners!

I love to put the dough together at night so it can rise overnight and bake the next morning for an simple, hands off schedule.

Here’s how to make it!

60 g active sourdough starter
375 g room temperature water
9 g salt
500 g bread flour

1. Mix all the ingredients together to form a shaggy dough, then rest for 30-60 minutes
2. Stretch and fold the dough to form a smoother dough ball, then place in a clean container covered in something non stick
3. Leave at room temperature for 10-12 hours or until doubled in size (I like to do this overnight)
4. Once doubled (in the morning), transfer to a greased 9×13 baking dish, cover with plastic wrap, and leave at room temperature another 1.5-2 hours until puffy
5. Cover the dough in oil and press in with your fingers to create dimples – try not to pop the bubbles that form!
6. Bake at 425° for about 30 minutes
