Dolma, Sarma, Warak Enab, Derev, Grape Leaves or whatever you want to call them! It’s a delicious recipe with seasoned meat and rice stuffed into a grape leaf, rolled and cooked to perfection. Growing up this was always one of my favorited that my mom would make. The rolling portion can be a little tedious but the recipe it self is pretty simple.

filling
2 lb 80/20 ground beef
1 onion grated
1oz tomatoes paste
1 oz pepper paste
3/4 cup rice (or more if you want)
2 tsp salt
1 tsp pepper
1/2 all-spice

Mix all filling ingredients together.

3 cloves garlic
1 lemon juiced

Rinse one jar of leaves and trim stems. Place about 1Tb of filling onto bottom of leaf in a log shape and flip up the bottom portion of the leaf, fold in the two sides and roll all the way fairly tightly. Repeat. place all the Sarma into a pot fitting nice and snug. fill 2/3 of the way with water and add 3 garlic cloves and 1 lemon juiced. place a plate on top of the sarma to weigh it down a bit, cover and simmer for 30-45 min or until the leaves are nice and tender.
