Za’atar Chickpea Salad with Creamy Tahini Dressing

This week’s meal prep salad is loaded with spiced & roasted chickpeas, shredded Brussels sprouts, pomegranate seeds, and is tossed in a super simple but flavor PACKED creamy tahini dressing recipe.

I love to eat this one just as a salad but it’s actually great when tossed into some pita pockets smeared with Greek yogurt along with a little seared chicken or halloumi cheese.

2 16 oz cans of chickpeas, drained, rinsed, and dried thoroughly
2 tbsp olive oil
2 tbsp smoked paprika
1 tbsp dried oregano
1 tsp salt
1/2 cup tahini
2 tbsp honey or agave
Zest from 1 lemon, juice from 1/2
1 tsp salt
1/2 tsp pepper
1/4 cup water, plus additional as needed to thin
4 PACKED cups shredded Brussels Sprouts
Seeds from 2 small pomegranates
1 bunch mint, finely sliced
1 bunch parsley, finely sliced
1/3 cup Za’atar (25g-30g)
