I make relish out of my green tomatoes. Grind them down in a meat grinder do the same with onion and peppers if you want that flavor. Sugar salt vinegar garlic and cook then can it's great!
I am Eastern European and in my country we pickle those green, unripened tomatoes, and let me tell you they are delicious! The recipe is very simple, you prepare a brine. For every liter of water you add one heaping table spoon salt and one table spoon of sugar. You boil the water, melting in the sugar and salt, then let it cool. Separately, you prepare your green tomatoes, carrot sticks, horseradish sticks, a few cloves of garlic, sprigs of dried dill, paper corns, a few bay leaves and mustard seeds. Arrange all of this into a container, then pour over the cooled brine. Cover with a kid, but make sure it isn't an airtight lid because this is a fermentation-based pickling method. After a few weeks you will have delicious picked green tomatoes. In my country we eat them with rich foods like roast, smoked-meats bean casserole, etc.
We did not grow Roma tomatoes when I grew up. But the cherry and heirloom tomatoes we picked before the frost green. Then wrapped each one in newspaper and put single layer in boxes in our basement/canned goods pantry. They did ripen. We also made fried green tomatoes, yum! You could try that with a sample size of green tomatoes.πβ€

I make roasted green salsa verde. Similar flavor as regular salsa verde. I just ensure I have the same total weight as other canning salsa recipes and itβs easy to roast them. I have the Ball Book and I use it often
