**Ingredients:**

– 1 Β½ cups dry Risoni pasta

– 3 tablespoons extra virgin olive oil

– 1 onion

– 4 cloves garlic

– Chilli flakes (optional)

– 350g grape/cherry tomatoes

– Β½ cup dry white wine (or ouzo)

– 2 tablespoons tomato paste

– 2/3 cup tomato passata

– 3 cups of hot vegetable/seafood stock

– 500g peeled raw prawns

– ΒΌ cup dill

– ΒΌ cup parsley

– Juice of Β½ lemon

– 100g crumbled feta

**Method:**

1. Prep your ingredients – dice the onion, chop garlic, and slice the herbs.

2. Heat olive oil in a large frypan on medium heat, then cook onion until soft. Add garlic and chilli, and stir in tomatoes and tomato paste.

3. Toast the Risoni, deglaze with wine, and add stock and passata. Simmer and stir in herbs and prawns.

4. Once cooked, finish with lemon juice, feta, extra herbs, and a drizzle of olive oil. Serve hot!
