    [**Brioche buns (recipe)**](https://www.theflavorbender.com/brioche-bread-recipe/) – My fav bread y’all. This is our favorite for breakfast sandwiches. Wouldn’t recommend to knead by hand because even with a mixer it’s a pain in the ass.

    [**English muffins (recipe)**](https://preppykitchen.com/english-muffins/) – So good homemade. I always thought I disliked English muffins but I just don’t really care for store bought ones. This is my second time making English muffins and I’m still learning. My dough was quite sticky and I need to add a little more flour next time. Major side eye at the recipe saying it yields 14 muffins.

    [**Everything bagel (recipe)**](https://sallysbakingaddiction.com/homemade-bagels/) – Probably not up to your standard NY bagel (I’ve never tried those so what I don’t know can’t hurt me.) But they’re still super yummy and chewy. My bf loves.

    [**Buttermilk biscuits (recipe)**](https://butfirstwebrunch.com/flaky-buttermilk-biscuits/) – My favorite biscuit recipe. I wanted to do jalapeno cheddar but my jalapenos were moldy. Womp womp. I cut them into rectangles to avoid over kneading scraps back together. Circle biscuits would of been prettier.

    [Pretzel buns (IG recipe)](https://www.instagram.com/cookim_mama/reel/C8XM1wPRH9s/?hl=en) – Okay, I tried something new and I wasn’t 100% happy with the results. Not the author’s fault, I didn’t have food grade lye. I used the baking soda method. They’re still yummy and have a *slight* pretzel favor. Plus pretzels are best first day you eat them. The salt dissolves into the bun overnight.

    **Breakfast burrito**s – Store bought tortillas, chorizo with scrambled eggs cooked in the fat, chopped up bacon, black beans, roasted potatoes seasoned with package taco seasoning, peppers + onions, pepper jack + sharp cheddar. Everything gets mixed into a large bowl so there’s an even amount of filling for every burrito/bite.

    **Breakfast sandwich filling** – 4lbs of honey ham + 3lbs of ground sausage. I think 50+ fried eggs? Kraft singles, munster cheese, extra sharp cheddar, and gouda cheese.

    I have to be honest y’all, I made the sandwiches based on vibes. I couldn’t be bother counting how many breads there were or eggs I was frying. It was a “this seems like enough” situation lol. Somehow I magically ended up with exactly enough meat, cheese, and 2 fried eggs to spare.

    This is how I [wrapped (YT link)](https://www.youtube.com/watch?v=Q0cyWNotcbw) my breakfast sandwiches. My fingers were cramping at the end but so worth it. I don’t like using plastic wrap or foil incase we want to heat our sandwiches in microwave. I place wrapped sandwiches in 2 gallon freezer storage bags.

    All the bread gets kneaded one night and placed in the fridge to do an overnight rise. The morning of I take out two doughs at a time, let them come to room temp for 30 mins (my kitchen is hot in the morning + oven running, might need longer if kitchen is colder), shape and let them proof. I fried my eggs on this day.

    By the time I’m done handwashing everything and cooking all the bread, I’m tired. So I leave breakfast burrito filling, sausage patties, and assembling the breakfast sandwiches for the next day.

    **How we like to reheat -** If we remember, we’ll take breakfast sandwiches out of the freezer into the fridge the night before. Place onto a baking sheet and bake at 350F for 17-25 mins. We check at 17 min mark, open sandwich, and poke inside to feel how cold it is.

    If we bake from frozen, my boyfriend will microwave for 90 seconds to thaw it out and bake for 20+ mins. I will just chuck a completely frozen sandwich into the oven and it will take 35-40 mins.

    Microwave from frozen is high 3-4 mins. Once again checking by opening sandwich and poking the middle. The outside will be hot but sometimes that middle will still be frozen.

    We serve our sandwiches with a mix of mayo + hot sauces 🙂
