My best loaf to date. I’d still consider myself a beginner, just baking bread for my family.
520g bread flour
12g salt
385g water
90g starter
Stretch & fold Q15 min x2, bulk ferment 5.5 hrs (my house is warm), stretch & cold ferment 6 hrs (I put it in the fridge at 2am so that’s why it sat in my fridge for 6 hrs).
Preheated oven & dutch oven for 1hr, baked at 475 for 22 min covered, 450 for 10 min uncovered.
I’ll grow my technique over time, but for me, sharing homemade bread with loved ones is the greatest reward of this endeavor.
And I’m pretty happy with this crumb too.
