I harvested a daikon raddish, beetroot and parsnip from my garden. I then added a carrot, onion, garlic, about 4 jalapeno and 3 habanero.
I cut them all to bits and roasted until they had some colour. I forgot to take a photo of that.
Next I added some water and white vinegar at one to one ratio, brought it up to a boil and added salt and sugar to taste. Finally I blended it until smooth. The texture was very thick so I added some water to thin it out a bit.

You can taste the parsnip and beetroot, the heat is just above mild.

Interesting choices for salsa. Never thought of daikon and parsnip before.

That beet is beautiful. Was it special variety or odd growing conditions that lead to the striping?

You knew exactly what you were doing when you placed the onion and beetroot above the carrot lol.

At what point does salsa become soup 🤔

That an… interesting combination. Why would you add water though?

Interesting! Love when “non-standard” ingredients are considered to add flavor, texture, boldness, etc.

OP, was there any slight bitterness/sharpness (in the taste) from the daikon radish addition?

I really want to try this. Such interesting ingredient choices. That’s the cool thing about salsa: experimentation.
