I’ve been experimenting with dough amounts, flour ratios, and hydration amounts and I think I finally found what I’ve been looking for. Looking forward to a ham sandwich tomorrow.

    May I ask you, how did you achieve this beautiful twirl without getting air pockets? I tried many times with my pullman pan, but it always separate.
