This is a broccoli rabe (sautéed w garlic, S&P), cherry peppers, sun dried tomatoes, and some sliced grape tomatoes w/ grande mozzarella. Flour is All Trǔmps and dough developer. I’ve been struggling to consistently get a good crust, but I nailed it this time. I was watching a random bread making video and the guy mentioned about how too much humidity in a gas oven can affect the crust. So this time, I preheated to 550F, then dropped temp to 465f, put the pizza pan on my steel, and slightly propped open the oven door. Bake for 10 min, then close oven door and bake for another 7 min. Came out just about perfect.

    Beautiful looking crust! Love the toppings. All trumps is great for pizza, just wish I could buy 5 or 10 pounds. How interesting that bread bakers need the blast of steam, and you’ve got a great hack to prevent moisture from natural gas combustion. Also what kind of dough conditioner did you use? Tia.
