Vegan rice pudding ๐ŸŒพ

    * 1 cup of medium grain rice
    * 1 can of coconut milk
    * 3 cups of milk (almond, oat, soy)
    * 1/3 cup of maple syrup
    * 1 tbsp cinnamon
    * 1 tbsp nutmeg
    * A few drops of vanilla extract

    1. Put all of the ingredients into a pan
    2. Heat on medium until it reaches boil
    3. Reduce heat and simmer for around 20 minutes

    (If it’s not looking creamy enough, just add more milk about halfway through.)

    Some recommended adding vegan butter or citrus zest to the pan to thicken it and bring out the flavor but I like it as is.

    I recommend adding a spoonful of jelly/jam to the top before eating! That’s how I used to eat it as a kid.

    Just from this alone, this recipe [contains](https://fdc.nal.usda.gov/fdc-app.html#/food-details/170172/nutrients) **70 g** of saturated fat.

    This is a mind-blowingly high amount of saturated fat. It’s about 350% of your RDI of saturated fat, and 700% if you’re concerned about cholesterol. Anyone thinking of making this should seriously keep this in consideration.
