This is a departure for me. Not only is it vegetarian but it’s also a social media recipe. This reel kept popping up and I finally gave it a try. It’s a shredded tofu “fried chicken” sandwich. And while I wouldn’t confuse it with real chicken, it was straight up delicious. A little chewy and crunchy. The “chicken” was made by shredding the tofu, spreading it on a sheet pan with parchment, add olive oil and season it. I used Vegeta, Red Boat fish salt, black pepper, and smoked paprika. Bake at 400 for about 25-30 minutes. I serviced it on a buttered, seasoned and toasted brioche bun, shredded lettuce, homemade burger sauce, dill pickles, and some hot sauce. Honestly so good. I’m so surprised

    Looks and sounds delicious! I’ve always been a big fan of tofu dishes and I’m definitely gonna give this a try. I would assume you’d use a pretty firm tofu to be able to shred it?

    How firm was the tofu before you shredded it? Did you bake it before shredding? How did you shred it? Like on a cheese grater?
