Bought an immersion circulator and gave it a go. Overall I think it came pretty good.

You got the cook spot on, at least in my opinion. How was the taste? Iv noticed that I typically don’t develop the same flavor profile with sous vide as I would other cooking methods. My go to is grill or smoking it (depending on thickness), followed by traditional pan searing / oven finishing, and then sous vide followed by pan searing.
Iv also gone under the broiler a handful of times, and while it’s not bad, it’s my least used method.
