Carpaccio is one of my absolute favourite dishes. It’s so simple, meat based, and consistently delicious, especially if you have a trusted meat supplier.
I like to use meat from my dry ager, but you can also use fresh meat that has not been aged.

As a starter or snack for 2 people.

INGREDIENTS:

🥩200g dry-aged raw beef
🥩2 tbsp parmesan
🥩 cold-pressed olive oil
🥩 black pepper
🥩 salt
🥩 fresh basil leaves

Step 1: Slice the meat as thin as possible, preferably with a meat cutter or electric blade. This is much easier if it’s partially frozen or you use an electric knife.

Step 2: Add slices of parmesan cheese.

Step 3: Top with olive oil, vinegar, salt, black pepper and fresh basil leaves.
