Variety of tomatoes and peppers.

I plan on making hot sauces with this pepper harvest and several other bags full of peppers in the freezer .

What would you do with all these green tomatoes?

    Are you making a green sauce with the tomatoes? Chimichurri or Salsa Verde? Awesome harvest by the way. Love the peppers!!

    I’ve also got a giant bowl of green plum and cherry tomatoes… Hope some good ideas come your way!

    I dehydrated my green chilli peppers, then put them through my ninja blender to make a hot pepper powder.

    I’ve never been brave enough to can mince meat, but I think some recipes call for a ton of green tomatoes.
    If they’re big enough you may be able slice, fry, and freeze. We like fried green tomato sandwiches and they’re good on burgers too. You’d have to do some research to see if you can freeze fried geeen tomatoes. Good luck!

    I just let my green tomatoes ripen. If you put them in a single layer in a cardboard box they will gradually ripen. If you add ripe fruit and close the lid, you can speed along the process. There’s nothing like enjoying garden tomatoes when the snow is flying.

    Too late for you, but I leave them on the vine. Trim off all the leaves. Cut the vine at the base. Hang it in the basement and they ripen over the next 2 months. Whenever I pick them and try and let them ripen they get moldy on the bottom.

    I made a not hot hot sauce from green peppers which was nice for friends who don’t like spicey.
    Green tomato mincemeat for sure a favorite to use up those. I use the filing for pies or mix it with oatmeal as a granola bar snack

    Tomatoes with some yellowing will ripen of the vine. Fully green ones do not. Store in one layer in a dark place. They will ripen faster in a paper bag or cardboard box. Add an apple if you want to quicken the process.

    I made a hot sauce with all my green peppers at the end of the season. Flavor isn’t as great as fully ripened ones, but it keeps in the fridge for months and it’s an easy way to add heat to dishes without needing to be the main flavor source.
