Pretty new to the art of reverse searing. Prime top sirloin from costco, in the oven for 45 minutes at 250F, then seared on a hot cast iron. Just in time for game 2! ⚾️

Too much gray band and not enough sear imo

That is cooked very well. Prime top sirloin is one of my favorites. And it’s nice that you actually got a nice thick cut from Costco. Just a preference, but I would prefer more of a sear on that. I usually do high heat on cast iron with avocado oil after leaving the oven. 45 seconds each side.

Needs a better sear/crust and more seasoning and salt but otherwise cooked to perfection

Let me ask you something, did you take this directly from the oven to the pan? The reason I ask is because the grey band is a little thick. I like to let mine come ALL the way down to room temp before putting them on my carbon steel/cast iron/stainless whatever.
