We got invited to cook for Big Green Egg at the Texas fire open meet up. We knew we had to do something special so we collected iguanas from the backyard in South Florida, brought them to Texas, we smoked them, shredded them, and cook them into a giant pot of posole! Oh, did I mention that we won third place overall?

I’d be fine with trying some smoked iguana. Smoking them whole does weird me out a bit though. How much meat do their bodies really have vs just doing the tail?

Maybe it’s just me, but…I think when you have beef, pork, chicken, and seafood to choose from (in terms of protein), you’re catering (lol, no pun intended) to a very small and eclectic audience.
To me, this falls into the same category as alligator, squirrel, fox, crawdad, etc. Some people dig it, but I’m just maybe more conventional. If I were to do something special, it’d probably be jalapeno/pineapple/bacon smoked baked beans, stuffed jalapeno poppers, atomic buffalo turds, or something like that.
