Kimchi expired at the end of May, so it’s been almost 5 months. It was stored sealed in a dark pantry. Should I throw it out, or is it safe to eat?

Kimchi doesn’t expire lol. It may have a “best by” date but as long as there is no visible mold then it’s good for years.

I wouldn’t eat it. Store bought kimchi like that not even refrigerated and that far past the sell by date is a no for me. Even if it wouldn’t make you sick, it’s probably nothing but super sour mush by now.

Stored in the fridge, absolutely eat… But in a pantry, toss. This is sold refrigerated and should stay refrigerated. It is not the same as being stored outdoors in earthen ware jars.

If refrigerated it’s probably okay! It might be sour I’d look up recipes where you cook the kimchi before eating

It says “keep refrigerated” right on the jar. Why did you go against those guidelines?
Open one and smell it. See if it’s a good smell or a bad smell.
I probably wouldn’t eat them because the proper storage requirement wasn’t taken.
Your nose will tell you. But I wouldn’t take the risk. Others might. Not me.

It says on it “Keep Refrigerated,” not refrigerate-after-opening. You need to toss it because it’s been in a pantry and hasn’t been stored properly.
If it has always been refrigerated from purchase (and of course if the transportation and retail place stored it correctly), then past the expiration date is usually fine as long as there’s no mold, the super-fermented kimchi provides really great flavor when cooked. (jeon, jjigae, bokkeum-anything)

A lesson learned…don’t store it in a pantry but only the refrigerator.
Also sour kimchi is best is a soup/stew.

Wait, you stored kimchi in room temp? They go straight into the fridge. Kimchi isn’t like pickles. You don’t store them in room temp.

Well kimchi is technically “spoiled” food similar to pickles so it technically can’t expire, the date is there just cause it has to. Was it in the fridge or on a normal shelf in the store? Cause if in the fridge then you should toss it, you always have to put the food wherever the store put it and you kinda fucked up by putting it in the pantry if it was refrigerated before

I presume it might taste incredibly sour? Probably not “gone bad”, just not appetizing in terms of flavor. Maybe you could salvage it by using it in jjigae, jeon, etc.

It is fermented, if no mold it’s fine. If that doubtful try a small piece.

I would not risk of getting sick from bad kimchi! Some say to use it in a soup but still can get sick 🤢. Unless it’s been properly stored, I would toss it and get new kimchi. One reason Koreans buried kimchi is to keep it cool all through out the year and can eat it right out of the ground
