Hey all. I have these New York (porterhouse) steaks.
How long should I cook them for and at what temp?

54 or 57C for a minimum of 1 hr, but probably 2-3hrs. Its really your own preference that you’ll have to try

Would recommend the Joule app as a guide. Don’t sign up, just skip to the temperature/time/results part and replicate the settings for how you want the final product to be

I do 56c at like 3-5 hours. Cooking it a long time makes it tender and searing is very easy. But most people do just an hour or so.

Admittedly I sous vide in an Instant Pot, but I run the temperature at 46-47° C for about 1.5 hours. Does a great job at breaking down connective tissue

Wow. Not a bad price for Costco. For us in the US it’s just around $12/lb

Are you supposed to salt the meat before vacuum sealing, or is that done before the final sear?

Throw that in at 6am at 125°.
If dinner at 6, pull it at 5:30. Sear. Butter. Let it rest for 25-30.

130F(54-55C) for 2 hours. Sear in a ripping hot pan, 1 minute per side.

I did two of these yesterday. 4hrs at 130°F then crosshatch sear on the gas grill.
