    Recipe:
    Tangzhong
    56 grams flour
    80 grams milk
    190 grams water
    Dough
    1100 grams flour
    1 cup sugar
    1 tbs cinnamon
    1/2 teaspoon salt
    2 sticks butter
    6 eggs
    1 3/4 cup milk
    20 grams yeast
    Topping
    3 cups flour
    3 cups powdered sugar
    2 cups shortening
    2 Tablespoons Vanilla
    For chocolate 2 tablespoons cocoa

    Wrote down a more detailed recipe if anyone would like to make!

    Tangzhong
    [ ] 56 grams flour
    [ ] 80 grams milk
    [ ] 190 grams water
    From the dough ingredients remove milk and flour. add to a saucepan along with the water
    Cook until a paste forms
    Allow to cool while you prepare rest of ingredients
    Dough
    [ ] 1100 grams flour
    [ ] 1 cup sugar
    [ ] 1 tbs cinnamon
    [ ] 1/2 teaspoon salt
    [ ] 2 sticks butter
    [ ] 6 eggs
    [ ] 1 3/4 cup milk
    [ ] 20 grams yeast
    Bloom yeast in warm wilk along with tablespoon of sugar
    In your stand mixer add flour & sugar followed by your bloomed yeast and eggs.
    Mix until dough forms then slowly add your cold butter a tablespoon at a time
    Mix for about 20 minutes or until the dough passes windowpane test
    Once needed, add to a greased bowl and allowed to rest for 2 hours or until doubled in size
    Topping
    [ ] 3 cups flour
    [ ] 3 cups powdered sugar
    [ ] 2 cups shortening
    [ ] 2 Tablespoons Vanilla
    For chocolate 2 tablespoons cocoa
    Once properly risen, punch air out and lightly kneed
    Form 80 gram balls and add onto lined or greased sheet pan.
    Prepare topping 30 g per roll
    With concha cutter or a butter knife lightly carve out your designs.
    Allow to rest for around 90 minutes
    Bake at 350 for 15 minutes or until golden brown!
