I made this for a dinner at work. It's butternut and ricotta filled pasta with Wild chantrelle mushrooms and Hazelnuts. The broth is made from parmesan rinds and herbs.

    The play with creamy sweet and acidic properties of the cheese,the sweetness of the puréed squash, the delicate firm but yielding fresh pasta, the roasted umami burnt popcorny flavor of the broiled chanterelles and roasted nuts, the slightly briny rich broth. Looks solid,nice dish Chef.
