    Using the cauliflower as a mash to substitute for mashed potatoes works well. Or even a rice substitute.

    Cauliflower is excellent pickled. Heat vinegar and water mixture w salt and sugar (optional). Any kind of vinegar (you know what you like) same for spices. I think cauliflower is good w red wine or white maybe a splash of malt. I would add garlic chutney or something w a little kick.

    Anyway pour over cauliflower hot. Once it cools refrigerate.
