I had to cut out the fat, it tasted good but I thought it would be more tender after 18 hrs.
Just some salt, pepper and garlic. Ice bath for maybe 30 min then sear in high heat stainless steel (don't own cast iron pan) for 20 – 30 sec on all sides.
Looked better IRL 🤨
What can I do to improve?
A 1kg sirloin roast is up next. Any tips for that one?
