I want to impress my guy who will be coming back from Alaska where he works really hard for weeks at a time. And cook something really warm and vibrant flavor and nourishing and impressive. To pair with this roasted bell pepper, cauliflower, sweet potato soup.

So with that in mind- whattya got? lmao

This soup I made with roasted veggies. I roasted one long sweet potato, two red bell peppers, one head cauliflower (I spiced them with a tbsp of Curry, a tsp cumin, a tsp paprika). One head of garlic (the top sliced off so you can squeeze it out when it’s roasted), three shallots , and like 2-3 chopped carrots. I roasted it for like 35 minutes at 400, but the sweet potato and carrot wasn’t cooked all the way but the cauliflower was a bit more burning so I took it out and microwaved the carrot and sweet potato.
Then I blended it with a can of coconut milk, some miso ginger broth (or veggie broth), and some lime.

It’s so damn damn good. It was the best soup I’ve ever had.

It’s really flavorful and hearty, so maybe something that balances it out but not too light like a salad, something still filling for a big guy. Nothing like quinoa bowls or anything with tofu or tempeh. Only whole foods too please, no fake meat, cheese or processed stuff . I like to make whole food balanced meals, just my thing.

Specific recipes or specifics would be great or just a general idea of what kind of food you think would pair well!

    I would say a baked acorn squash(halved so makes 2 servings) 😁

    What I like to do is at the last couple minutes of baking after the flesh is tender is put a little butter, coconut sugar and some walnuts(or whatever you like) let that heat up and it makes a good little dessert on the side of a fall themed soup like this 😁

    Not sure if this is an entree, but I would love roasted sweet potato, pumpkin salad, roasted broccoli, rice paper rolls, cumin rice as a side to this amazing soup:)

  5. Maybe some Bhajji? Onoin Bhajji always go over well anywhere I’ve brought them and there’s many more types you can choose from. Being made of chickpea flour they can be quite filling.

    Risotto. I don’t like mushrooms but if you do, that would probably pair well. Otherwise, consider a pumpkin risotto.

    If you mean that your soup is an appetizer and you’re looking for a complementing main course, I would suggest some type of pie. The textures them are different from the soup.

    If you mean that you want the soup as a main event and need something to bulk it up, some hearty sourdough can do a lot of heavy lifting.
