My first thought is you’ll go from hating cutting vegetables to hating cleaning the vegetable cutting machine. I’d lean toward a mandolin or maybe a spiralizer but it depends what exactly you’re cutting and how

Mandolins are great. Julienne peelers are my favorite. Cheap, and they julienne vegetables like a champ.

This is called a rotary grater or Trommelreibe in the German speaking world. I have a mechanical one from a Swiss brand called Zyliss which is one of the best out there. They even supply these attachments for Kitchen Aid and other big name brands. They have a factory where they manufacture the blades and that’s what they are famous for.
I absolutely love mine. They are super easy to clean, quick rinse under the tap and wipe down with a towel. You shouldn’t put them in the dishwasher to maintain the sharpness of the blades.
The only downside is that they aren’t great with soft summer vegetables like tomatoes. Handles tougher vegetables like a champ.
If you get a good brand, you won’t regret. These are not fiddly like the nicer dicer stuff.

Just learn how to use a knife my dude. It will make your life like 100x easier. You can always prep a bunch of stuff ahead of time and then mix it with the greens right before serving.
