Ingredients: Serves 6 (530 calories and 38.4g protein per serving)
Tray:
1kg chicken thighs
250g baby tomatoes
200g sweet mini peppers (can also use normal peppers) sliced roughly
3 small red onions chopped
2 courgettes cut into rounds
1 tbsp mixed herbs
1 tbsp smoke paprika
4 whole garlic cloves
50g Feta crumbled
Handful kalamata olives
Handful freshly chopped parsley
Marinade:
2 tbsp olive oil
50ml lemon juice
1 tbsp minced garlic
1 tbsp smoked paprika
1 tsp grated lemon zest
1 tbsp oregano
Method:
– Add your chicken to a bowl along with marinade ingredients and set aside to marinade (ideally minimum and hour or overnight)
– Add your tray ingredients to a bowl, add tbsp mixed herbs, 1 tbsp smoked paprika drizzle olive oil season well then mix together. Place the marinated chicken on top and place in oven for 45 mins at 180c.
– Once cooked, add your olives on top, crumbled feta, olives, fresh parsley and lemon on top with a drizzle with olive oil, enjoy!
