Ran out of 00 flour on this one so I went with a ~2/3 bread to 00. Tried to lower the temp on the oven but it didn't compensate enough to create a rise and proper char. Undercarriage is lacking. Dough balls weighed around 220 grams vs the previous at 250/260. Progress is not always linear but as long its upward then it's all good.

This is a **beautiful** pizza. Love that cheese melt so much. How much cheese (weight) is that and how big was the pizza, I want to try this ratio.

My only critical comment is one of a personal preference, which is, I’m not a fan of adding oil to pizza. Pizza generally has enough tasty grease. Looks like you may have added it after it came out of the oven. I’m not suggesting your pizza has more grease than it should without the oil; I just don’t see the point. I also don’t think it really provides flavor unless you happen to be using crazy awesome oil or flavored oil, and even then, I still wouldn’t do it. If the pizza were cheeseless or meatless, then maybe.
