Greek Lemon Chicken Soup – a creamy delight

Avgolemono is a Greek Sauce consisting of chicken broth, lemon and egg. Use more broth and other ingredients and you end up with a fantastic soup that’s not only easy to make but also very tasty. Did I mention you can use leftover rotisserie chicken for this? Perfect for a single person household.
Ingredients:
1/4 cup finely diced onion
1/4 cup finely diced celery
1/4 cup finely diced carrot
1 small garlic clove minced
1 bay leaf
2 cups chicken or vegetable stock
1/4 cup rice or 1/4 cup orzo
1 whole egg
1/2 lemon juiced
1/2 cup (or more to taste) shredded rotisserie chicken
Salt and Pepper to taste
Parsley for garnish
Method:
➡️ in a pot heat a spoonful of oil/fat of choice and saute the onion,celery and carrot with a dash of salt. You can add the bay leaf at this point or later
➡️ once soft, add the garlic and saute for another minute until fragant
➡️ deglase with the stock – add the bay leaf if not already done so
➡️ simmer for 10 to 20 minutes
➡️ add the rice or orzo
➡️ keep simmering for until rice/orzo are cooked. About 10 min for orzo, 15-20 for rice
➡️ turn to low and add the chicken to warm thru
➡️ meanwhile whisk the egg until foamy (so whisk like a mad man)
➡️ while whisking add the lemon juice to the beaten egg
➡️ still whisking slowly add a ladle or two of your soup (just the liquid, not the veggies). Keep whisking – it’s called tempering
➡️ turn off the heat!now whisk the egg& lemon juice mixture into the soup
➡️ now whisk the egg& lemon juice mixture into the soup
