RECIPE
1 CUP UNSALTED BUTTER, SOFTENED
1 CUP PEANUT BUTTER, CREAMY OR CRUNCHY
1 CUP GRANULATED SUGAR
1 CUP PACKED BROWN SUGAR
2 1/2 CUPS ALL PURPOSE FLOUR
1 1/2 TSP BAKING SODA
1/2 TSP SALT
PREHEAT OVEN TO 350* AND LINE A BAKING SHEET WITH PARCHMENT PAPER
COMBINE DRY INGREDIENTS: WHISK THE FLOUR, BAKING SODA AND SALT TOGETHER IN A SEPARATE BOWL
MIX SOFTENED BUTTER, SUGARS AND PEANUT BUTTER. BLEND WELL, BUT DO NOT OVERBEAT.
COMBINE MIXTURES: GRADUALLY BLEND THE DRY INGREDIENTS INTO THE WET MIX, STIRRING UNTIL JUST INTEGRATED TO AVOID OVERMIXING.
SHAPE COOKIES: ROLL THE DOUGH INTO TABLESPOON-SIZED BALLS AND ARRANGE THEM ON THE PREPARED SHEET, LEAVING SPACE BETWEEN EACH. FLATTEN THEM WITH A FORK TO CREATE A CRISSCROSS PATTERN.
PLACE IN THE OVEN FOR 10-12 MIN. UNTIL THE EDGES ARE JUST GOLDEN. THE COOKIES WILL SET AS THEY COOL, CO DON’T WORRY IF THE CENTERS SEEM SOFT.
ALLOW THE COOKIES TO REST ON THE SHEET FOR A FEW MINUTES BEFORE TRANSFERRING TO A WIRE RACK TO COOL COMPLETELY.
KEEP IN AN AIRTIGHT CONTAINER TO MAINTAIN THEIR FRESHNESS.

Good to see a post from you! The cookies look great! I was without power, internet and call/text service for ~ 6 days! Good times (said facetiously)! Glad y'all had only minimum damage at your place and that your cabin survived. Sad to say, but I highly doubt some small towns in NC will ever recover.
I'm glad you guys survived the storm. I grew up in GA, and our roof was also hit by trees leaned over by a funnel that touched down in our neighborhood. That was back in the 90s.
After 2020, I started watching prepper channels, to make sure we'd always have supplies if our power went out for an extended period of time.

Glad to see you back and you all are okay. Helene was an awful storm. We got some of it but not the bad part of it but we did get Milton bad. It was the scariest storm I have ever been through. God is good. He protected me and my daughter and our furbabies. My feral cats I feed even made it through unharmed. I prayed for their safety more than my own. My daughter was without power for 3 days and her house got a little flooded but her boyfriends Dad lives close by to them and didn't lose power so they went there with their cats. I lost power for 20 minutes and then it flickered off and on throughout the hurricane. Cookies look good and peanut butter is protein so they will be good for your diet. 🤣

Great seeing you back in the kitchen cooking. I am assuming smooth peanut butter would be fine with this recipe. As much as I love nuts, I have never liked the crunchy peanut butter.
John lost all the shingles on his house but God was good and no trees on his home.
Michael's home had no damage. They actually had a very nice baby shower a few days after the storm and his generator kept everything running smoothly.
Charles had some limbs, small trees, and such down and no damage to his home.
We had 4 oak trees uprooted but none harmed anything but our feelings. We lost some shingles and siding but we were still able to remain in our home.
Thankfully we have a generator that kept us very comfortable. We were the only ones with internet service but ours is through wireless satellite. No power for 12 days and Charles was 18 days.
I became so emotional about the loss of so many trees and damage to peoples homes that Bob became extremely concerned for me.
God is So Good! Love y'all ❤️
