Surprisingly good and high protein vegan banana bread

INGREDIENTS:
1. Protein Powder (Pea Protein Isolate)- (20 grams per serving)
2. Vital Wheat Gluten – (50 grams per serving)
3. Bananas (60 grams per serving)
4. Optional Spices – Pumpkin pie spice or cinnamon, plus a pinch of salt for flavor.
5. Baking Powder
DIRECTIONS:
1. Preheat the oven to 420°F. Mash the bananas and mix with protein powder and vital wheat gluten in separate bowls.
2. Mix the wet ingredients (bananas) with the dry ingredients, adding water or plant-based milk if needed until the batter reaches a dough-like consistency.
3. Transfer the batter to a greased pan and bake for about 20 minutes. Check doneness and flip if needed; you can bake an additional 10 minutes for a crispier texture.
4. Once baked, let the bread cool slightly, cut into servings, and enjoy with vegan cream cheese or other toppings.
