I'd been stalking here for some time and finally did the work although I cook regularly but only one or two recipe at a time. Today, I cooked six- ground beef with pepper/cheddar, beef stir-fry, pork stew and egg muffin, not in the picture, roasted veges and chili (still cooking) First time making egg muffin and it came out perfect. I didn't have the exact measurement with these, I was just eyeballing it. I bought the meat (chicken breast, ground beef, pork butt(precut into strips), brocolli/ cauliflower (precut) from Costco so it saves me time. I divided the meat first into portions and freeze some of them, as is.I browned enough ground beef (85% lean) for the 1st recipe and Chilli and chopped some of the veges to save some time.
Beef with green/ red bell peppers and shredded cheddar -browned ground beef,garlic,onion, bell peppers sauted using the oil from the ground beef then seasoned with salt,pepper, garlic powder,cumin, paprika and a little bit of chili powder. I set aside some for quisadilla and the one in the picture I topped it with shredded cheese.
Beef stir fry- I used one portion of shabu-shabu cut beef. Saute garlic, ginger,the add the beef. I put a little bit of soy sauce for color. Seasoned with pepper, salt and garlic powder. I add the carrot first then the cauliflower/ brocolli/ celery/ bell peppers and onion.
Pork stew- one portion of the port butt Saute garlic,onion then port. Seasoned with sauce sauce,salt and pepper, cover until meat is tender. Then add the carrots, bell peppers. I forgot to buy the potatoes. Simmer untilmeat/ veges becomes tender.
Egg muffins – I cooked the veges first(sauted onion, bell peppers and spinach to remove some water). I used 9 eggs, add a little bit of milk, salt, pepper and garlic powder. Baked in 375 degrees Celsius for 15-20 minutes.
Chili- I just dumped the garlic, onion, browned ground beef, beans(pinto,black, red),bell peppers, celery. Seasoned with salt, bouillon cube, cumin, paprika and chili Celery.
Roasted veges- seasoned with salt, pepper, garlic powder and sprinkle a.little bit of olive oil, toss to mix. Baked for 20-25 minutes in 400 degree Celcius.
For the meats, one portion of each meat was marinated with the following.and put in a ziplock. These will be airfield tomorrow.
-shabu-shabu- with soy sauce, half of a 🍋 juice, salt/ pepper/ garlic powder.
-1.5 chicken breast cut into strips with cumin, salt/pepper/ garlic powder/ chili powder/ paprika
-pork butt cut into strips, add soysauce, salt/ garlic/ cumin/ garlic powder.
- I used more or less the same ingredients, mix and match, to avoid food wasting. All foods were only good for 4 servings to share with my mom.
