this is the list of ingredients work this suit your family needs
egg plant ( sliced 1/4″ thick). sprinkling with salt, allow to sweat and dampen off after 10-15 min. you can roast these sliced in an oven at 350 on a greased baking sheet, pan dry or air fryer. soften to be able to roll.
pasta sauce
filling:
ricotta cheese drained
grated Mozzarella cheese
grated parmesan
salt
pepper
red pepper flakes (optional)
chopped parsley
1-2 cloves minced garlic
mix well set aside.
on each roasted egg plant add filling roll and set seam size down in baking dish small layered with pasta sauce. top with pasta sauce when finished. superintendent with parmesan cheese and mozzarella. bake in 350 degree oven until bubbly, golden brown, and heated through.

I have purchased several eggplants over the years. No one has ever told me if I'm supposed to cut the seeds out or peel the eggplant. So they ended up going bad. I need help with eggplants please.
