    Autolyse on counter for 1 hour, stretch and fold 4x each hour after. Let rest on counter for +6 hours.

    Shaped and moved to fridge in banneton overnight.

    Preheat oven / Dutch oven to 475 and placed dough in Dutch oven with lid for 30 minutes with heat reduced to 450. Lid off at 410 for 20 minutes.
