Dough:

1 1/4 cup shredded mozzarella cheese (140 g)

6 Tbs. Almond Flour (30 g)

3 Tbs. Coconut Flour (22 g)

1/4 cup Alternative Sweetener ( I use Lakanto granular) (48 g)

4 Tbs. Butter (melted)

1/2 tsp. Baking Powder

1/4 tsp. Xanthan Gum

1 Tbs. Psyllium Husk

1/2 tsp. Vanilla Extract

1 egg (room temp)

Filling:

6 oz. Cream Cheese (softened)

1 tsp. Lemon Juice

1/2 tsp. Vanilla Extract

1/4 cup Alternative Sweetener (can use powdered or granular) I used lakanto granular monkfruit (48 g)

1 egg yolk

Frosting:

3 Tbs. Powdered Sweetener (36 g)

2 Tbs. Heavy Cream (more or less depending on consistency preferred) (1 oz)

1/4 tsp Vanilla Extract

Preheat oven to 400 degrees. Start with the filling, beat together softened cream cheese and sweetener until well combined add in 1 egg yolk, vanilla and lemon juice, set aside. Sift and whisk dry ingredients together. Melt the butter, whisk sweetener and vanilla into butter. Melt the cheese in the microwave in 30 second intervals until completely melted. Add in butter mixture and dry ingredients. If too stiff microwave for 10 seconds, add in the egg and combine well until it’s a cohesive dough. Roll between 2 pieces of parchment paper into a rectangle approximately 10 inches by 13 inches. Cut dough into 12 squares, you can leave them like this and just push up the sides a little to keep the cream cheese filling inside, using an offset spatula, place onto a parchment paper lined baking sheet and top with the cream cheese filling, 1-2 Tbs. in each, if you do only 1 Tbs. you will have extra filling leftover but the danishes will look more professional and bakery like (and be less carbs!). Bake 10-12 minutes, rotating half way threw. Pull out when they are a nice golden brown. Or you can cut into nice danish shapes like a pinwheel, or make turnovers.
