  4. I’m a big fan of eggplant parmigiana. Might I suggest: herbs are missing hereβ€”basil in particular adds a lot to the dish; use a sauce that is less watery (more whole tomatoes, crushed by hand than what we in North America call β€œmarinara sauce”); fresh mozzarella adds a lot; before it goes in the oven, let it sit on the counter for 30-45 minutes’ so the eggplant absorbs the juices; and let it stand a good 30 minutes after cooking also. This all adds to a dish that is more firm rather than a sloppy pile sliding all over the plate.
