    They look fantastic. Important question though: can you in any way cock up lye dipping and baking ending up burning your esophagus? That’s the only bit that prevents me from making 100% accurate pretzels

    Is it hard making those from scratch? What would be the difference if u dont use sourdough ?

    I made these last week and wasn’t a fan. I’ve made pretzels without lye or sourdough and they were awesome, so I can’t figure out where I went wrong. Dough felt great, looked great when baked, but they were too dense and chewy. I think I either overbaked by a couple minutes, dipped them in lye for too long, or maybe I just don’t like the texture of the sourdough in pretzels…?

    How long do you dip yours in the lye bath?
    What’s the texture like compared to regular yeasted pretzels?
    How long do you bake/what temp?

    RECIPE

    50g Active Sourdough Starter

    155g Water

    275g Bread Flour (KA Blue Bag)

    6g Salt

    10g Diastatic Malt Powder

    15g Butter

    10g Sugar

    Lye Bath

    940g Cold Water

    38g Food Grade Lye

    This Makes 4 Pretzels @ 125g Each.
