I bought a prime rib from costco to save money but I definitely cut them too thick for personal consumption. Steak was heavenly and i made a bourbon compound butter for it but it was way too much steak for just me. I had to share with my family and unfortunately now they know how good a sous vide steak is so I won't be able to enjoy my steak without everyone begging me for a slice. I guess there could be worse problems to have lol.

Is the text a joke or are you actually making steaks for yourself and not your family? Lol
Also before comments come in about my green knife and plastic cutting boards, I am working on upgrading. I’m just looking for recommendations if anyone has some suggestions.

Some people will hate me for saying this, but leftover steak is great for steak and eggs or making some really bougie pasta dishes.
Do you really save money by buying the roast? My experience with Costco is that unless you bought during a sale, the steaks and roasts have the same per lb cost. But nothing wrong with buying a roast and cutting to your desired thickness.
Not too thick. Sous vide thin steaks are practically impossible to sear. without overcooking.
Thin slice leftover for roast beef sandwich for lunch next day. Or slice thick leftovers and reheat on cast iron/nonstick–rare sides down.
I would also consider dropping your sous vide temp about 5 degrees F.
Looks about the same thickness as typical Costco steaks. Love the Sous vide but I’ve got complaints about doing steaks that way so I’ve switched to a pan broil then bake method for the really thick cuts like this.
