Tteokbokki rice cakes in a from-scratch gochujang sauce with UnMeat “spam” slices and a local product called Tempha made by Dave’s Gourmet Korean Food that very closely resembles eomuk or sliced fish cakes. I’ve loaded this up with green beans, lotus root, taro root, carrots, shiitake mushrooms, peppers, and onions and served hot topped a drizzle of miyokos liquid mozzarella, a healthy sprinkle of furikake, and a YoEgg poached egg!
