Cooked a couple of thick bone-in ribeyes on my tuscan grill inside my pizza oven. Flames were probs around 1200° Thoughts? Looks like a perfect medium to me however I prefer slightly more medium rare. Sear was phenomenal

Sear looks great (the whole meal does). Did the pepper burn at all? I don’t pepper my steaks before I put them in a skillet for that reason. Wasn’t sure what this oven would do.
Any way to keep the sear but get the temp of the steak down to rare/med rare?
