These delicious appetizers are popularly called shotgun shells because they resemble such. They are easy and simple to prepare in the oven. They are good appetizers or snacks for parties or get-togethers and can also be enjoyed alone at home.
They can be prepared both indoors and outdoors, smoked and indoors by grilling them.

Tip: To avoid the pasta being still hard at the end of cooking, ensure that shotgun shells are prepared shotgun overnight and put in the fridge for at least 4 hours so the pasta can soak up the moisture from the minced meat, bacon, and refrigerator.
You can prepare shotgun shells three days earlier especially if a crowd coming. Just store them in the fridge. Enjoy!

SHOTGUN SHELLS/ CANNELLONI PASTA

INGREDIENTS

250g Cannelloni (pasta)
1kg minced meat/ground beef
Salt
Pepper
1 tsp Origanum
1 tsp red pepper flakes
Mozzarella cheese cubes
1 kg bacon
BBQ sauce
Optional: 1 pkt Oreos

CHICKEN FAJITA

Chicken Fajita is an easy delicious Mexican weeknight meal. A classic Mexican recipe, juicy chicken is seasoned, seared, and cooked to perfection. The meal includes sauteed bell peppers onions and a squeeze of lemon that adds great flavor to the dish. It is traditionally served with warm tortillas, Mexican rice, black beans, nachos, and so on. To complete this dish toppings or sides should be included. It is flavorful, simple, and easy to prepare with basic home supplies.
In this video, I have made two examples of how to enjoy this easy delicious dish and have shown two methods of preparing salsas, one fried and the other raw. One dish was with guacamole and the other with sliced avocado. One dish served with tortilla and one not.

Bell or robot peppers
Onion
Jalapenos

Lemon or lime juice

Cream cheese -optional

FOR SEASONING:

SPINACH & RICOTTA CHEESE AL FORNO

This delicious gooey pasta is easiest and can be prepared as a midweek dish. It is served as a complete meal. It is packed with protein in prosciutto, carbohydrates in cannelloni shells, vegetables in the spinach mixture, and dairy from the cheeses.
The ricotta cheese filling makes it creamy on the inside. It has a crispy crust due to baking and a contrast flavorful tender goodness on the inside. The crisp is from the baking of the Parmesan cheese on top and moisture is from the tomato passata which is the pasta sauce and the gooey ricotta cheese.

The pasta shells were parboiled for three to five minutes and cooled while preparing the filling. The pasta shells can be filled as shown in the video or the filling can be piped. I have carefully filled them with my hands. Please be careful when filling the shells, they are easy to tear.

Tips:
– I found it best to prepare all the ingredients before cooking and assembling the pasta to avoid being overwhelmed by chopping and cooking.
-Add oil to the par-boiling water so that the pasta shells do not stick together and tear.
-Make sure the spinach cools down before mixing with eggs to avoid eggs cooking.
– Bake for 30 minutes if par-boiled, if not bake for 35 minutes at 180 degrees C or 356 degrees F or until the pasta is cooked through.

1 tbsp olive oil
Parmesan cheese to taste

For Filling:
1 tbsp olive oil
1 leek
1 Garlic clove
2 cups baby spinach
2 cups ricotta cheese
2 egg yolks
6 slices prosciutto or cooked ham
Salt to taste
Black pepper to taste
