This bread took me like 5 hours to make, from the moment I started mixing the dough to the end of baked. 100% sourdough. My recipe is 75% bread flour, 15% whole wheat flour, 10% rye, 65% water, 2.5% salt and 50% sourdough starter (60%fermented flour)
