My issue is when people delay too long before eating. By then, the food gets cold and loses its peak flavor and texture.
Process: Sous Vide > Refrigerate > wait until mealtime > slice > indoor grill for a quick sear.
The result: tender, juicy perfection, seared just right. Melts in your mouth.

What cut is that? For a good cut you could probably just grill it from raw, no? Like Korean BBQ basically.
Unless this is a cut that needs a long cook first – like a chuck.
