I got crazy ammount of food yesterday for free and now trying to figure what to do with it all before it goes bad.
First order of bussines is making mushroom soup. Saw Kenjis mushrooms soup video and wondering if I can mix some of these mushrooms, maybe all of them or just some of them.
Can I cut all of them up and freeze them for later use?

Yes you can mix the mushrooms. Just don’t mix morels and shitake, they combine to create chlorine gas.

You can freeze cooked mushrooms
You can mix them but I’d keep the chanterelle and oyster mushies for something higher value like risotto or pasta or on a steak
Add garlic and tarragon and you will have a delicious mushroom soup.
You can dry them as well.
Chanterelles will get slimey in soup unless you dry sauté them first. They still might but I wouldn’t just drop them in.
I mix mushrooms for my mushroom soup.
NEVER freeze chanterelles without blanching them first. I ruined at least half a kilo of them that I foraged last year😭😭 They get unedibly bitter.
Research every one before you freeze them
I think you’re better off drying them.
