It’s my birthday today! Strawberry cake with cream cheese icing


I got this recipe from Sally’s Baking Addiction. I made a strawberry puree using local berries back in the summer when they were at their freshest and tastiest. Froze it specifically to make this cake. I have some work to do when it comes to frosting but I am enjoying my tradition of baking my own birthday cake each year.

    Looks so yummy, if you are trying to achieve a really smooth finish on the frosting, get yourself a very wide flat spreader and maybe an offset spatula and chill the cake between frosting layers. I think it’s super cute! Happy Birthday!

    What a good idea to preserve a fruit at it’s seasonal best to use in your next birthday cake! That could become a thing! And it looks so, so good! To be honest, I often prefer a cake looking rustic. Then you know the effort was put into the taste! Happy birthday, Reddit strawberry friend 🍓
