    What I WOULD strongly recommend, wake up early, get brisket on at 5 or 6 AM. Cook all day, pull brisket at night. Rest overnight in electric turkey cooker on warm, eat next day.

    No waking up at 3, and you can drink beer all day watching brisket cook.

    The game changer for me was a 10×10 you see at the tailgate with a full net. I sit, smoke meat, and watch movies.

    Overnight cooks go in the oven in my household 😅

    2-3 hours in the smoker and BOOM oven finish.
