I make this every halloween. A few friends come over to help hand out candy, and they all ask if I'm making it days before and rave about it afterwards. So I must be doing something right, although I don't think there's much you can do wrong. Keep in mind this feeds quite a few people lol.

2-3lbs ground meat
3 packs taco seasoning*
2 packs ranch
2 cans black beans
1 can dark red kidney beans
1 can pinto beans
2 cans corn
1 can Rotel
1 large (28oz) can tomato sauce
Brown meat in skillet. Drain. Add to crockpot. Drain all beans, add to crock pot. Add undrained corn and Rotel. Add tomato sauce. Add taco and ranch seasonings. Add a cup water/beef broth if needed.
*If making seasoning, 3TBSP per lb meat* Taco Seasoning: *
1 TBSP chili powder
1/2 TBSP cumin
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper

Taco soup is a favorite in our family. Freezes great too so I always make extra.

My family loved this. I wasn’t too sold on it but it came together eventually when I added a tablespoon or two of tomato paste.
I make something very similar, but I put frozen chicken breasts instead of ground beef! After it cooks the chicken shreds perfectly.
Love taco soup, I keep THIS and copy cat Chicken Gnocci from Olive Garden in my freezer. I have 16 oz deli containers (I’m single). I fill and freeze. Perfect servings. Both REHEAT perfectly. I typically have some frozen breadsticks in my freezer too, this is GREAT with corn chips and mexican mix cheese on top. It’s a filling heart soup.

One of my favorite things to add is hominy! I also enjoy crunching up Fritos and serving it as a topping with shredded cheese. You can also use tortilla chips, but they don’t hold the crunch as well imo.
I use a really similar recipe, but I make a smaller portion, and I tend to make it without meat a lot of the times because I’m lazy.
I love this! I make a nearly identical recipe except I use chicken breasts and then shred them instead of ground beef.
