I found this in the bottom of the chest freezer, it’s from Feb 2022.

You’ve got nothing to lose. Go for it. Worst case scenario the outside is freezerburned and you got more practice.

Either it’s freezer burnt, or fine. Either way, you can smoke it, just do you want the outcome as smoked brisket or future stew meat

I reading the cookbook Fat Salt Acid Heat by Samin Nosrat and she explains that freezer burn is water leaving the muscle and then crystallizing. It may benefit you to do a wet brine for a night before smoking to re-hydrate and salt this cut. But yes, smoke on and enjoy. Waste not, want not.

Better to save the effort of a brisket cook for more of a sure thing IMO.

I just smoked a Turkey that was 14 months beyond the use by date – it was in a deep freezer. Not planned, but it happens. No burn and turned out great.
